Eggland’s Best Goes “Pink” to Help Fight Breast Cancer – Support Eggland’s Until November 15th!

 

As I mentioned last week there are several products that you can purchase throughout the month of October that support Breast Cancer Awareness and Research.  But few that you can continue to purchase through mid November to support the cause.  Even fewer are the products that you actually need or use regularly.  Eggs are one of those items that most everybody uses on a weekly basis and are affordable.  Eggland’s Best, America’s #1 Egg, is going “pink” to help support Susan G. Komen for the Cure.

Through November 15th you can support Susan G. Komen for the Cure by purchasing Eggland’s Best Pink Dozen Eggs which feature the signature “EB” stamp with the Susan G. What’s Your Favorite Egg Recipe?

I love EB Eggs and one of my favorite new items that they have come out with are the bags of ready cooked hard boiled eggs.  They are SO convenient!  When I feel like an egg salad sandwich or some homemade guacamole it’s so nice to have eggs at the ready.  I hate having to wait for them to be boiled when I wish that they were ready as soon as the thought pops into my head.  I thought that I would share a couple of my favorite egg recipes – Greek Egg Salad Sandwich and El Salvadoran Guacamole.

I want to share the El Salvadoran Guacamole first because its really delicious and super easy to make.  I learned this from my mother-in-law and it is a staple at my husband’s family functions.  I know that eggs and avocados may not sound that appealing but trust me, it’s delish!

El Salvadoran Guacamole

Ingredients

  • 1 hard boiled egg
  • 1 ripe avocado
  • salt – about 1/2 tsp or to taste
  • 1/4 c. diced onions (optional)

Use an egg slicer to to dice the egg or alternatively you can place it in a mug and chop it with a sharp knife.  Place your chopped egg in a bowl.  Then add one diced avocado to the eggs.  Add the salt, and the onions, if you like onions like I do.  Grab a spoon and mix it all together.  Taste it with a tortilla chip and if you think it needs a little more salt add that now.  Go little by little with the salt because once you add too much you can’t take it away.  This guacamole is delicious as a dip or as a condiment.  Enjoy!

Greek Style Egg Salad Sandwich

Ingredients

  • 2 hard boiled eggs
  • 1/8 c. chopped celery
  • 1 Tbsp of Greek Tatziki Dip
  • 1/8 tsp curry
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • dash of paprika
  • 1/8 c. of diced green onions (optional)
  • 1 sandwich roll
  • mixed greens
  • 1/4 of one large cucumber

Dice the hard boiled eggs, my preferred method is the mug trick I mentioned above, and put the crumbled eggs in a small mixing bowl.  Add the Tatziki dip, curry, salt, pepper, paprika and celery to the eggs.  Also add the green onions if you like them, as I do.  Mix everything together until its all combined.  Spread the mixture on the sandwich roll, place cucumber slices on top.  Then add the mixed green or any type of lettuce that you prefer.  Top with the other half of the sandwich roll and voila!  Perfectly yummy Greek Style Egg Salad Sandwich!

Happy #Halloween! Check Out This #Recipe for Cute Ghoulish Brownies Courtesy of #Pringles

Pringles Ghoulish Brownies

INGREDIENTS:

  • 6 ounces baking chocolate, unsweetened
  • 3/4 cup unsalted butter or margarine
  • 2 cups sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 3/4 cup flour
  • 1-6.41 ounce can of Pringles Original or 1-5.71 ounce can of Reduced Fat Pringles Original
  • 1 cup coarsely chopped pecans or walnuts (optional)
  • Orange and black frosting (optional)
  • Edible decorations, such as sprinkles and candy corn (optional)

 

DIRECTIONS:

1.       Preheat oven to 350 F

2.       Line 13×9-inch baking pan with foil, and spray foil with cooking spray.

3.       In a glass bowl, microwave chocolate and butter on high for 2 minutes.  Stir until chocolate melts.

4.       In a stainless steel bowl, mix sugar, eggs, and vanilla until well mixed.

5.       Pour in butter chocolate mixture and mix well.

6.       Empty Pringles and flour into a food processor, and puree until very fine.

7.       Empty flour mixture into chocolate mixture and mix well; add nuts to distribute.

8.       Bake for 30 minutes, and cool.

 

OPTIONAL DECORATION DIRECTIONS:

1.       Before pouring Pringles into food processer, reserve 3-5 crisps and set aside.

2.       While brownies cool, gently break Pringles crisps in half and decorate with frosting gel.

3.       Top brownies and frosting and place crisp “gravestones” in brownies along with other edible decorations to create a fun and playful graveyard scene.

 

Pringles Review Plus Some Seasonal Snacking Tips

 

I was recently sent some Pringles for review and all though I have had them before its been a few years since I last snacked on them.  It was nice to eat them again and remember why I liked them so much.  The fact that they stay fresh in a can is a huge plus too that I really appreciate.  Lately my boys have been leaving the chip bags open and then forgetting to clip it back up when they are done.  I hate stale chips not to mention the fact that it’s a huge waste of money.

I forgot just how addicting Pringles can be!  I downed a can pretty quickly, but I couldn’t help myself, they were delicious!  My boys really liked Pringles too.  Which is great because I am always looking for new snack ideas for their lunches.  Pringles has these cute little snack packs that are the perfect size for a lunch time snack.  The snack packs are also great in the car when we go on our weekend family road trips.  I’m always looking for travel sized snacks that will keep the boys’ hunger at bay on those long drives.

If you haven’t had Pringles in awhile I would really recommend getting some.  You can make those cute Ghoulish Brownies shown above too!  I know that my boys would think that those brownies are cool all year round!

The canvas itself is the same size as the other portraits but the frame is something that I might want to add later to make it fit in just a bit better.  I do love that the image is wrapped around the edge of the frame so that guests will see that all though there isn’t a frame the canvas has a finished look to it.  Here is a picture of the image wrap up close:

 

 

All in all, I love Easy Canvas Prints.  It really was an easy process to transform my favorite photo of my sons into a beautiful canvas that my husband and I will always treasure.  I would definitely go back to them for any future photos that I would like to see on my wall.  I’m even considering blowing up my Pretty Pink Momma logo into a canvas for my home office, I think that would be such a great way to define what my workspace is all about.

#LadyAntebellum Newest #Album Own the Night is in Stores Now!

On September 13th Lady Antebellum released their third album, Own the Night, through Capitol Nashville/EMI Records.  When I was offered the opportunity to review this album I jumped at the chance!  To be quite honest I haven’t been listening to country music lately but I know that I love the hit Need You Now by Lady Antebellum.   This group is wildly popular and given the chance to catch a listen to their new album I knew that  I would enjoy it.  And wow, I was SO right!  This new album is awesome!

My favorite song on the album is We Owned the Night followed by the very popular single Just a Kiss.  Some people like songs because of their lyrics and others like them for their instrumental components, I value a song by both.  Many of the songs on this album resonate with me and I could listen to them over and over again.

We Own the Night 2011 Concert Tour Dates

Lady Antebellum is going on a Own the Night Tour!  This will be HUGE for Lady Antebellum fans.  Over the summer Lady Antebellum performed at the Oregon State Jamboree in our tiny little town of Sweet Home, OR.  The show took place in the high school field, and it was such a sight to see all the fans hoarding our tiny little town, so excited to see Lady Antebellum.  My husband had complimentary tickets to the show but seeing as he had to work that day we gave our tickets to some of his employees to enjoy.  It was still really amazing to hear Lady Antebellum and see all the fans from street near the high school.  I heard that they put on quite a show!

After selling out every city on the group’s first-ever headlining tour, multi-platinum group Lady Antebellum announced that they will launch the first leg of their OWN THE NIGHT 2011 TOUR on Nov. 11 in Knoxville, Tenn.

The first leg of the 21-city arena tour will feature special guest Josh Kelley and a combination Eden’s Edge and Randy Montana in the opening slot. Tickets for the opening night in Knoxville, Tenn. will be available on Aug. 26 to the public.

#RealSteel Now Playing in Theaters! – #Review and #Interview with Dakota Goyo

A gritty, white-knuckle, action ride set in the near-future where the sport of boxing has gone high-tech, “Real Steel” stars Hugh Jackman as Charlie Kenton, a washed-up fighter who lost his chance at a title when 2000-pound, 8-foot-tall steel robots took over the ring. Now nothing but a small-time promoter, Charlie earns just enough money piecing together low-end bots from scrap metal to get from one underground boxing venue to the next. When Charlie hits rock bottom, he reluctantly teams up with his estranged son Max (Dakota Goyo) to build and train a championship contender. As the stakes in the brutal, no-holds-barred arena are raised, Charlie and Max, against all odds, get one last shot at a comeback.

“Real Steel” is directed by Shawn Levy (“Night at the Museum” franchise and “Date Night”).

“Real Steel” is an action drama about a former boxer (Hugh Jackman) who, against all odds, gets one last shot at a comeback when he teams up with his estranged son (Dakota Goyo) to build and train the perfect contender for the new high-tech sport of robot boxing.

The action packed family film Real Steel opened in theaters last weekend. I had the pleasure of taking my two oldest sons to see this movie at a screening last week. I went in thinking that this movie was going to be a very “boy” oriented movie. I was pleasantly surprised to find that the movie was much more than a rock ‘em sock ‘em robot filled movie. Don’t get me wrong, it is very action packed and thrilling, but there is also a heartfelt story that lies beneath all of the robot fight scenes. It definitely tugged on my heartstings at times. I could also see that my sons were touched by a lot of the scenes too.

My sons are 8 and 6 and they gave the movie glowing reviews and they couldn’t wait to tell their Dad about it when they got home. That being said I do feel that there were many parts of the movie that were too adult for them to really understand what was going on. Hugh Jackman’s character plays a dead beat Dad and I don’t think that they were prepared for or really got the emotion behind the father-son disconnect between Max and Charlie because they have a father that is quite the opposite. I think that the first 20 minutes or so of the movie was a little slow for them to get into because of the adult themes of gambling, debt and custody issues. All though as soon as Max, Dakota Goyo’s character, entered on the scene they became very interested because he was very relatable.

Overall, the boys and I both really enjoyed Real Steel. It was fun, action packed and the robot fight scenes were amazing! The boys and I can’t wait for this movie to come out on DVD so we can share the fun and excitement with their Dad. Below is my 8 year old Oscar sharing his favorite scenes in Real Steel.

 

Interview with Dakota Goyo, Max, in Real Steel

Myself and several other bloggers had the opportunity to interview Dakota Goyo last week.  Each of us had different questions and it was really fun to listen to the answers from the perspective of a 12 year old.  He was really fun, charming and sweet!  I thought that it was so cute that he mentioned several times how working with robots is a dream job for a kid.  Below are a few of my favorites from the questions that were asked, including my own of course!

  • Me:   I took my two sons to see the movie, and they are eight and six and they really enjoyed it.  They wanted me to ask you if you were really scared when you were filming the scene where you fell off the cliff in the junk yard-that was something that had all of us on the edge of our seat when we were watching it? 
  • Dakota:  No, but my Mom was.  I really love doing my own stunts-getting that adrenaline rush.  At first, I was a little nervous-it was a 60 foot hill that I had to slide down with a harness, and then there is a huge drop at the end.  The water at the end was probably the worst part because I really don’t like to get dirty, but I had to go through it obviously,.  Seeing my Mom’s reaction was priceless, but I really enjoyed it.
  • Caryn @ www.RockinMama.net:  Did you do any preparation to work with the robots?  
  • Dakota: I looked over the script several times to get to know about the robots.  I also looked at the robot models they had on-set to learn the technology.
  • Christie @ www.5minutesformom.com:    In the production notes we read, the director said he left a lot of room for ad-libbing and a lot of what was in the movie was not what was in the script….was there anything in particular that you ad-libbed that was in the movie that they left in that you liked?  
  • Dakota:   There was a lot of things that I ad-libbed.  There was a lot of screaming, and yelling at Atom in the ring.  They took out this scene where I am in a bar where I ad-libbed a lot.
  •  Jeana @ www.Deals4Dummies.com:   What do you feel was the coolest thing you got to do?
  • Dakota:   Working with the robots.  I have wanted to work with robots ever since I was a little kid.  It was exciting to see a nine-foot tall functioning robot that lights up-it’s every kids dream.

  • Kristi @ www.AdventuresOfACouponista.com:   What was it like working with Hugh Jackman, and how did you form such a believable and touching bond.  
  • Dakota:  We had time-three weeks, close to a month before we starting filming to get along and have a relationship.  Me and Shawn and Hugh just got along so good, we were like good friends and were like bros, and there was no nervousness between us.
  • Kristi @ www.AdventuresOfACouponista.com:  What drew you to this movie and this character, to make you want to audition for it? 
  • Dakota:  Definitely the robots, it was nice to work with real robots that were functional was a dream.  But also meeting not Wolverine, but the guy, Hugh Jackman, one of the  nicest guys in the universe.   Just getting to work with him was unbelievable.  The audition was long…It took four auditions.  First, I sent a tape over to Shawn, and then Shawn wanted me to get another tape down to him.  Then Shawn flew me down to LA to do an audition, and then another audition, but thankfully Hugh was there at the same time, and I got it.
  •  Jules @ www.Alittlebiteoflife.net:   The dance moves that you do in the film-did you come up with those dance moves yourself,  or were they choreographed?  
  • Dakota:  I never really tried to dance before this film, so I never knew I could.  Our choreographer, Anne Fletcher, taught me the moves, and we spend twenty minutes a day for three days to learn the two-minute routine.  It wasn’t a long time-it seems like it was, but it was only like an hour.  Ever since learning the moves, I have been dancing ever since.

The Circus is Coming to Town!!! Get Two #Tickets for the Price of One #PDX #familyfun

The Piccadilly Circus has been traveling around the states and is finally making a stop in Portland, OR October 22nd and 23rd.  I am so excited!  I have fond memories of going to see the circus when I was a kid and I can’t wait to share this experience with my boys.  I know that they will be amazed at all the fun action that the circus has to offer.  The boys are going to go nuts when they see all the stunts, and quite frankly, so am I!

What Inspires You to Live a Healthier Lifestyle? #Under500

The last couple of weeks I have been telling you about how Marie Callender’s under 500 calorie frozen entrees can help you live a healthier lifestyle.  And how I also love that they are filling and have that comfort food taste without all the comfort food fat and calories.  What I haven’t really talked about is why it’s so important for me to start living a healthier life.

Last week I shared that my parents have been a huge inspiration to me for their strength and use of portion control when eating.  True, my Dad has had a little help with a gastric bypass but my mom has just strictly limited her portion size and lost 40 lbs.  In either case, both have them have worked really hard to reap the rewards of their weight loss success over the last 9 months and they truly inspired me to take a long overdue look at myself and my own struggle to lose those extra pounds.

I am at a point in my life where I have come to the realization that weight loss needs to be a main focus.  I am not someone who could stand to lose a few pounds, I wish it were that simple.  I am one of those people that could stand to lose about 80-100 pounds.  That is significant.  Seriously.

It’s a hard thing to face and its an area that I have struggled in for many reasons.  In all honesty it comes down to one reason that I haven’t lost the weight yet.  I simply wasn’t ready.  I didn’t want to give up the things I love, the food that comforts me and all the things that go along with “dieting”.  It’s going to be a long, hard road to losing the weight and gaining myself back.

I think that I am finally ready.  My parents have taught me that it is possible to eat what I want, I just need to limit how much I eat.  Plus throwing in some exercise wouldn’t hurt either!

The truth is that if I don’t change my ways now while I am in my early thirties it will be much harder to do so as I get older.  I don’t want to be in my forties facing this same problem.  Now is the time to take action and regain self control.  No more excuses – just results.

By eating meals that are portion controlled and well balanced I will reach my goal.  So far, I have really loved the Marie’s options for under 500 calories and I will definitely be adding a couple of those meals to my shopping cart each week .  The fact that they are reasonably priced and quick to make will be a huge help for me on those days when I am short on time and looking for a filling meal.

Today for example, I didn’t have a lot of food in the house and I was really hungry for a satisfying meal – before I headed to the grocery store.  We all know it’s never good to go grocery shopping on an empty stomach right?  So I quickly threw together a lunch with my mom – did I mention she is visiting?  She made us a quick caesar salad from one of those kits and I prepared a Three Cheese Tortellini Marie Callender entree (click here for a coupon) for us to share.  It was a perfect lunch, pasta and salad – my favorite!  The portions were appropriate and both of us left the table happy.
